”Our pork bacon is smoked and cured by a local butcher. It is sliced to medium thickness.
The fall/winter bacon is fattier than the spring and summer bacon as a result of colder temperatures while the pigs are growing. Keep the bacon very cold right up until cooking; otherwise it goes very soft and is harder to handle.”
