Simple Comfort Foods Using Preserves

Winter calls for hearty, comforting meals. Using preserved produce can make things so much simpler. We talked about preserving in a previous blog, and it can be as simple as chopping, peeling & freezing your squash! Here are some simple ideas to get your creative juices flowing:

Root Veggie Soup
Fry your favourite spices with salt in oil and add frozen onions.
Combine frozen carrots and squash, cover with water and boil. If you like a bit more sweetness or tartness, add some frozen chopped up apples.
Blend and adjust to taste!

Beet & Goat Cheese Salad
Add pickled beets to your salad for additional flavour, colour and nutrients. It can be very satisfying to include all tastes in a meal, so in your salad try to include something sweet, sour, bitter, astringent and pungent. A homemade dressing can check many of those boxes!

Sweet Potato Mash
Blend frozen sweet potatoes with butter, salt and warming spices like cinnamon, nutmeg and ginger for a cozy side. The best!
